Gluttony: Baked Sweet Potato

I often come across recipes on Pinterest (thank God for Pinterest!!) and pin them to my “gluttony” board with the intention of making a vegan version and posting it on my blog. This rarely ACTUALLY happens because I either get too busy, too tired, or I forget about them, but this delicious “loaded” baked sweet potato really caught my eye (plus the ingredients were easy-always a plus!), so the other day when I wanted a really simple, healthy, delicious dinner, I decided to go for it. So, here it is:

“Loaded” Baked Sweet Potato

or

Slightly Altered Recipe I Ripped Off From The Domestic Man

You will need:

  • 1 large sweet potato
  • I cup quinoa, rinsed (I like the tricolor quinoa from Trader Joe’s)
  • 2 stalks of kale, coarsely chopped (I like lacinato kale the best)
  • 2 oz. mushrooms, sliced (I used crimini)
  • 1 shallot, diced
  • 1-2tbsp Earth Balance
  • 1/4 cup dry white wine (I may have used a little more than 1/4 cup because, well, I like wine.)
  • salt and pepper, to taste

1. Preheat oven to 400 degrees.

2. Wash your potato and poke it with a knife. Bake for about 50 minutes.

3. In a medium pot, bring 2 cups of water to boil over medium high heat.  Add quinoa and bring back to boil. Cover and simmer for about 20-30 minutes, or until all the water has been absorbed.

4. After the potato has baked for about 25 minutes, add the Earth Balance to the pan and warm on medium heat. Add the shallot and sauté for a few minutes, until it smells great, but before it starts to get too brown (mine got a little too brown :-/ ). Turn the heat down to low medium, and add the mushrooms and the wine. Continue to sauté for a few more minutes, until a good majority of the wine has evaporated and the mushrooms are nice and soft. Add the kale, and continue to cook almost all the wine has evaporated. Remove from heat.

5. When your potato is done, remove from oven. Cut it down the middle and stuff with quinoa. Top it, heaping, with the kale and mushroom mixture. Add a little salt and pepper to taste, and boom. You’re done. Delicious healthy dinner. You’re welcome.

Lust: Mickey’s Girl

I’m not the biggest fan of online shopping, but when I stumble upon a great site that completely fits my style, I get hooked, and that’s exactly how I felt the first time I checked out Mickey’s Girl.  I’m not sure how I even came across this website in the first place, but it’s AWESOME! Sloth: The Walking Dead

Ok, so I’m a little behind on this one. People have been talking about AMC’s The Walking Dead for a while now, but zombies scare me, so I’ve been reluctant to watch the show, but I got curious the other night on Netflix and decided to give it a shot.

HOLY. CRAP.

BALLS.

What a great show.

Let me warn you: the pilot episode is scary. Not American Horror Story scary, but very suspenseful. I highly recommend watching the first few episodes in a row.

The show focuses on Rick Grimes, a sheriff who is shot on the job and wakes up in the hospital alone in a world that has been taken over by “walkers” (zombies!). He is finally reunited with his wife and son, along with other survivors, and they face crazy circumstances and try to survive in a world taken over by a dangerous virus.

I seriously watched the first two seasons in like two days.

No shame.

What I love about this show is that it really explores the moral dilemmas that truly would plague us if such an epidemic were to happen in our world. Now, I certainly don’t believe in zombies, but I do find the theory fascinating. What would you do to protect yourself and your family?

The characters in the group of survivors are relatable and very real. They are posed with moral choices at every twist and turn.

But what you will probably most remember is the GORE.

I do not love gory movies, but somehow it’s different when people are fighting zombies. If a zombie’s body gets ripped in half when survivors try to pull it out of a well, you really don’t care. But you should know, every episode is very very gory, so be prepared!

The lead actors are of course fabulous (Andrew Lincoln, Jon Bernthal, Sarah Wayne Callies), but I also think it’s important to note the main child actor in the show, Chandler Riggs. That kid can act his butt off. What would your childhood have been like if you’d had to fight for your life every single day? Riggs does an incredible job showing a child’s point of view in a post-apocalyptic society, and I’ll be the
first to say it: He deserves and Emmy nomination! I don’t know how kid actors do it! This kid is fantastic.

Anyway, watch the show. You’ll get hooked. The end.

Vanity: Birthday Beauty Buys!

So….I had a birthday!  Yay me!  This year, I decided to buy myself a birthday present (you guys do that too, right?). Ok, I bought a few birthday presents, but oh well.  It’s my birthday!  Anyway, I bought some seriously good stuff that I just had to share with you guys!

1. MAKE UP FOREVER ROGUE ARTIST INTENSE #40

Seriously the most perfect shade of orange. It looks mostly red in the photo, but trust me, it’s quite orange. This will definitely be my new shade for summer. It doesn’t dry your lips out, but isn’t too shiny.  It also stays on really well, but doesn’t get all over your face. $19 at Sephora

2. ESSIE NAIL LACQUER IN MEET ME AT SUNSET

This one actually wasn’t a birthday present.  I just picked it up at Target last time I was there. It’s a great red-orange shade.  (as you can see, this is clearly the summer of orange…get it? Like summer of George?? No Seinfeld fans? …Ok.)  It goes great with everything. $7.79 at Target

3. JOSIE MARAN ARGAN CLEANSING OIL

This is the GREATEST facial cleanser I’ve ever used. (and I’ve tried them all!) I struggle with skin that is very dry in some areas, then breaks out in others, and I have never found anything that truly balanced it out until now. (HALLELUJAH!) I have long been a believer in argan oil and have used it as a moisturizer, but the cleansing oil is perfect because it makes my skin feel clean, but doesn’t remove all the natural oils, which makes my skin produce less oil. Also, argan oil is known for repairing damage and fighting aging, and I’m all about that. $32 at Sephora (but it’s a huge bottle!)

4. JOSIE MARAN ARGAN DAILY MOISTURIZER

Before I bought the big bottle of the cleansing oil, I bought a mini size of each from Sephora $20 for the cleanse & protect duo.  I highly recommend this if you are curious and want to try it out! The moisturizer is very light, smells great, and has SPF 40. So, it’s pretty much perfect.

Wrath: A Word or Two About Air Travel

It used to be glamorous. It used to be exciting. It used to be only a little uncomfortable. Now, taking a plane trip is about the most taxing experience (2nd to childbirth). Everyone flies. You have to fly to get pretty much anywhere. So, why has the quality of air travel been on a steady decline since the 60’s?

Does anyone else remember getting a little pillow & blanket? A decent sandwich? How about those little tv’s that were in the headrest of the seat in front of you where you could play games and watch movies? Airplane wifi??? WHY haven’t I seen these things in years??? Now, the only amenities I see on planes are a stale package of pretzels (roughly 10 minis per package), a half-full tiny plastic cup of beverage (mostly ice), and exactly one square foot of personal space.

If you’re real lucky you’ll get to sit next to:

-crying children

-a 300 pound man who’s afraid of flying and cries half the trip (true story)

-a guy who sits behind you and angrily asks you to put your seat back up when you’ve dared to recline it

-the child who kicks your seat the entire trip whose parents DO NOT do ANYTHING to stop him

-the person who puts their tray table up and down and up and down (JUST PICK A POSITION ALREADY!!!!)

-a person who actually thinks they want to have a conversation with you

-the guy who decided to bring a bag of beef jerky on the plane

-a puker

And you get all this for the fair price of (on average) $400-$500

Gluttony: Veggie Lentil Soup!

Los Angeles was cold and rainy today and it took every ounce of willpower for me to get out of my warm comfy bed to work out and then go to work, so after I got home, I decided to make a warm delicious hearty soup! Nothing is better than soup and PJ’s on a rainy day.

VEGGIE LENTIL SOUP or RAINY DAY GOODNESS

Ok, so the picture doesn’t do it justice. Trust me, this soup is GOOD!! It’s also a great way to clear out your fridge and use up extra veggies you have lying around, so be creative and use whatever vegetables you like!

What you’ll need:

1 medium onion, chopped
1 head of kale, chopped
2 cloves of garlic, minced
1 tomato, chopped (could probably do without, but I had one and I wanted to use it)
1 cup dry lentils, rinsed (or buy pre-cooked lentils if you’re lazy like me. I found some at Trader Joes)
4 carrots, chopped
2 potatoes, peeled and chopped
Vegetable broth (I used a whole box)
2 tablespoons olive oil
Salt & pepper
A little hot sauce (if you like!)

Heat the oil in a big pot. Add onions and garlic and sauté until soft.

Add the rest of the veggies (except for the kale) to the pot and sauté for a few more minutes.

Pour vegetable broth into your pot and bring to a boil. Add lentils (unless you used lentils that were already cooked). Reduce heat and simmer for about 30 minutes, or until lentils and veggies are soft. Add kale after about 25 minutes and pre-made lentils if you used them.

Add a little salt and pepper.

Makes about 6 servings.

I added a little hot sauce to my bowl and it was PERFECT.
